Brewing Process:
The legendary story of Cook1788 Reserve Shiraz begins with the nocturnal harvest of grapes in South Australia, in stark contrast to the daytime picking of local fruits. These independent grape batches undergo a 5-7-day individual fermentation process in stainless steel vertical fermenters, maintained at temperatures between 25-29°C. Subsequently, the malolactic fermentation process is initiated through a gentle pressing with precise measurements of 1° Bali degrees, followed by a skillful transfer to French oak barrels. The wine then undergoes a clarification process and is harmoniously blended before bottling.
